Each year mixes theory, practical kitchen classes and work-integrated learning (WIL) in industry kitchens:
- Year 1: hospitality basics, food hygiene and safety, sustainability, preparing ingredients, nutrition and core cooking methods.
- Year 2: baking and patisserie, including cakes, pastries, dough products and desserts, together with kitchen operations and management.
- Year 3: advanced cooking applications such as nutritional and international cuisines, food and beverage service, and supervision and leadership skills.
Business management, communication and self-development run through the programme, so graduates can run a kitchen section and not only cook in it. First-year fees include two sets of chef whites, safety boots, a knife set and the City & Guilds registration.
Graduates can move straight into industry or continue to hospitality management studies.
